Eat This! Magic Raw Mushroom Marinade


There is much talk of mushrooms being one of the super foods. Not only are they antioxidants, but they are an excellent source of vitamin B, protein & fiber. Mushrooms are also high in selenium & iron.

This raw mushroom mixture is perfect atop your favorite pasta, homemade pizza or as a topping to a fresh green salad.

Slice fresh, washed mushrooms into 1-2 inch pieces
Combine raw mushrooms in a bowl with
1/8 cup of XVOO
Dash of sea salt
1/8 tsp of cayane pepper or red pepper flakes
4 cloves of garlic
2 Tbs basil*
1 Tbs oregano*
1 tsp sage*
1 tsp thyme*
1 Tbs parsley*
Let sit for 5-15 min before serving

*can be substituted with 4 Tbs of a quality, fresh Italian spice blend if it's available to you. Also, feel free to use fresh ingredients such as basil and parsley when you can! Adjust quantities to taste.
